At CHO Wines, we commit ourselves to crafting elegant wines that reflect the versatility and caliber of Willamette Valley terroir. Dave Cho, winemaker, pushes his classical training by experimenting with different styles of winemaking as with our ancestral method bubbles or the use of carbonic maceration in our single vineyard Pinot Noir. From traditional and ancestral method sparkling wine to single vineyard white wine made from Pinot Noir grapes, we intend to show you the diversity of this classic Oregon grape and the breadth of Dave Cho's winemaking technique.

As a guide, our wines that are labeled with the classic Oregon wildflower logo are made with classical winemaking techniques. Our popping colored logos are Dave's experimental wines from Piquette, to Pet-Nats and coferments.

The Chos harvested a total of 40 tons of Pinot Noir, Chardonnay and Syrah from the Willamette Valley and The Rocks District of Milton-Freewater in 2022. What started as a harvest that was looking slim in yield and late due to a wet spring and early frost that hit the valley after budbreak, transformed into a bountiful year full of gorgeous fruit. Another surprise from mother nature. The summer stayed warm and devoid of rain, and a series of hot days pushed these grapes to ripening earlier than previously expected. Our first grapes of Chardonnay were harvested on September 20, 2022 from Lake Chelan, Washington and our last fruit of Pinot Noir from Laurel Vineyard was picked on October 21, 2022. All our red wines were put to barrel by November 8, 2022.
